Real Bahamian Conch Chowder
(Great wintertime food to warm the soul)


1. 1lb chopped or ground Conch
2. 4 tblsp lime juice
3. 6 Strips of Bacon
4. 2 Large Onions chopped
5. 2 Garlic Cloves chopped
6. 3 Stalks of Celery (with tops) chopped
7. 3 (14.5 oz) cans of Chicken Broth
8. 1 bottle clam juice
9. 2 Bay Leaves
10. 1 tsp Worrcestershire sauce
11. 2 shakes Tobasco sauce
12. 1/3 cup Sherry
13. 2 Cups cubed new potatoes
14. 1 (16oz) can chopped Tomatoes
15. 1/4 tsp Paprika
16. 2 tsp chopped Parsley
17. 1/4 tsp Oregano
18. 1/4 tsp Basil
19. 1/4 tsp Thyme
20. 1/8 tsp turmeric


1. Marinate chopped Conch in Lime Juice for 1 hour.

2. Strain off juice, reserving two tablespoons.

3. In a large kettle, cook bacon until almost crisp.
 Remove, drain, and chop into 1" pieces.

4. In the bacon drippings, saute Onion, Garlic, and Celery until tender.

5. Add in Broth, Clam Juice, Bay Leaves, Worcestershire Sauce, Tobasco, and Sherry.

6. Add in Peeled & cubed potatoes.

7. Stir to blend and simmer for 10 minutes.

8. Add Tomatoes, Conch, and Seasonings. Simmer 1.5 Hours.

9. Serve hot with your favorite soup crackers and Hot Sauce.
