Outrageous FISH STORIES

The Ultimate Nacho
(Dynamite Football Season food!)

Ingredients:

1. 1lb Bar-b-que Venison, pork, or beef with a little extra kick from Cayenne Pepper
2. 1 Large bag of round flat corn tortilla chips
3. 1 Can of refried beans
4. Sliced pickled Jalepeno Peppers
5. 1LB shredded cheddar cheese
6. Spray oil (like PAM)

7. Sour Cream
8. Favorite hot sauce

Aluminum Foil

Directions:

1. Pre-heat oven to 400 degrees
2. Cover 2 large cookie sheets with aluminum foil
3. Lightly Spray the cooking oil onto the aluminum foil
4. Take tortilla chips one by one and spread refried beans onto the chip about 1/4" at the thickest point leaving the edges of the chip   
 
     uncovered.
Place Tortilla chips on cookie sheets until you run out of room. Chips should touch but NOT overlap each other.

 Using a fork (and a finger) place the bar-b-qued meat on top of each chip covering the refried beans
6. Place a slice of Jalepeno Pepper on top of each mound of bar-b-que meat (optional for the ones who cannot take it) 
7. Cover chips with the shreaded Cheddar Cheese concentrating the cheese on top of each mound of meat
8. Place cookie sheets in the oven (one at a time) on a middle rack for around 10 minutes until cheese is fully melted
9. Remove cookie sheet and serve. Use a spatula to lift nachos from the aluminum foil.
10. Add Sour Cream, Hot Sauce, etc to taste
11. Make more!
