Grilled Kingfish Sandwich

I caught a few Kingfish last week and I smoked about half of the filets and I also cooked some that night and froze the rest (the afternoon it was caught). I took a bag out two nights ago and grilled it with heavy Cajun spice and it was great, but as we were also having some of our Real Bahamian Conch Chowder, we had leftover King.

Looking in the fridge the next day for some lunch, I noticed the Zip Lock with two pieces of grilled Kingfish inside. I grabbed it, some Romaine lettuce, some Miracle Whip, sweet relish, and some sliced Italian bread.

1. I nuked the filets for around 45 seconds to make them a bit hotter than just warm so it would be softer.
2. I toasted the Italian Bread
3. I mixed some Miracle Whip and the sweet relish for a "Special Sauce"
4. I threw the lettuce on one piece of bread, the king on the other, smashed the filet with a fork just to break it up, then grabbed a drink & some chips and I was ready for my restaurant quality (only better) lunch.
5. After I ate, I made a second sandwich for a friend and dropped it at his shop on my way to the warehouse. It feels so good to share..... :-)

Try this next time you have some leftover (fresh) fish....
